Blue Velvet Cupcakes with Vanilla Cream Cheese Buttercream

I made these scrumptious cupcakes for a friend's baby shower. The cupcake was moist and delicious and the buttercream was the perfect texture.

Pan seared Swai (a tender, hardy, white fish from Vietnam) I put 2 tablespoons of Avocado oil in a skillet and heated on high. I seasoned 3 Swai fillets with salt, pepper, garlic powder, and dried basil then added them io the skillet. Seared on both sides until cooked through. Added 3 teaspoons of lemon juice, 2 tablespoons of butter and minced garlic and basted fillets with it for about a minute on each side. Plate and set aside to rest. Serve hot!  For the buttered Lima beans, boil them in 1/2-1 cup of water for 10 minutes, covered. I then added plenty of unsalted butter, salt, and pepper and cooked for an additional 15 minutes. Use slotted spoon to dish onto plate and serve hot!  For the creamy mashed cauliflower I used a bag of frozen cauliflower and steamed in the microwave for 6 minutes. Sausage, Peppers, and Onions

 and it's just as simple as that! This is one of my favorite meals and you can add whatever suits your fancy!  Kielbasa  Sausage, sliced or chopped Onion, chopped or sliced Green Pepper, chopped or sliced Minced Garlic Jalapeno pepper, deseeded and chopped  Mushrooms Salt Pepper Chili powder Ground cumin Garlic powder Onion powder Fresh chopped cilantro Lemon juice White rice Jasmine rice Can of diced tomatoes with juice saute onion, peppers, and garlic, in EVOO with salt & pepper.  Add chili powder, mushrooms & lemon juice.  once mixture is tender, add meat.  heat through.  serve over cooked rice. Bacon and Apples - Super simple. Super Delicious.

All you need is: Your favorite bacon Your favorite apple(s), I typically use 2 Granny Smith, but any hardy cooking apple will do! a sweet onion (optional) Salt Pepper and any spice you want to add to it. I opted for a shake or two of Dynamite.  It comes from  Flavor God I start with gathering everything that I need:  skillet, cutting boards, knives, apples, onion, bacon, salt, pepper, & the Dynamite. I start chopping up the ingredients (remember to use separate cutting boards for the fruit/veggie & the bacon).  I core and chop the apple. I usually leave the peel on the apple, but you can peel the apple if you prefer.  Then chop the onion, I prefer the onion to be about the same size as the apple chunks, but do whatever size you prefer. Slice the bacon into bite size pieces.
