Bacon Cheddar Scones - Farm to Table Ingredients

These Bacon Cheddar Scones were an assignment for my Contemporary Pastry Arts Course. We had to source and utilize ingredients from local growers and farmers. 

I chose local bacon and local raw cheese sold at a farm store I worked at, J & L Green Farm, and these scones came out absolutely delicious!

I utilized and adapted the recipe Bacon Cheddar Chive Scones from King Arthur Flour.

Sharing a post from my old blog, this soup was delicious! This wonderful soup was a hit with myself & my man.  He keeps telling me that I am trying to fatten him up with all the good food & the wonderful home made biscuits I've been making lately! Pan Seared Basil, Lemon, & Garlic Buttered Swai Fish with Buttered Lima Beans, & Creamy Mashed Cauliflower

Pan seared Swai (a tender, hardy, white fish from Vietnam) I put 2 tablespoons of Avocado oil in a skillet and heated on high. I seasoned 3 Swai fillets with salt, pepper, garlic powder, and dried basil then added them io the skillet. Seared on both sides until cooked through. Added 3 teaspoons of lemon juice, 2 tablespoons of butter and minced garlic and basted fillets with it for about a minute on each side. Plate and set aside to rest. Serve hot!  For the buttered Lima beans, boil them in 1/2-1 cup of water for 10 minutes, covered. I then added plenty of unsalted butter, salt, and pepper and cooked for an additional 15 minutes. Use slotted spoon to dish onto plate and serve hot!  For the creamy mashed cauliflower I used a bag of frozen cauliflower and steamed in the microwave for 6 minutes. Valentine's Steak Dinner for 2

There's just something delicious about a steak dinner.  My favorite cut of steak is the rib-eye, but with how expensive steaks are these days, the sirloin cut is just as delicious. Sirloin steak does not have the fat marbling that the rib-eye or the NY Strip have. But that doesn't make them any less delicious or desirable.  Petite Sirloin with Creamy Garlic Mashed Potatoes and Buttered Steamed Green Beans and Chocolate Mousse with Whipped Cream I got everything through our local Walmart Superstore. I sometimes loathe shopping so I use their pick-up service to get groceries. I used it this time for our groceries and the items needed for this dinner.
